Patrick Martin Middleton, 32, has been charged with attempting to cause grievous bodily harm, dangerous driving and vehicle arson.
A black Vauxhall Astra was driven at the officer outside the Omnibus pub in the Middleton area of the city on Friday (February 19).
The car then left the scene driving erratically.
The officer suffered non-life-threatening injuries, he was taken to hospital and later discharged.
On Sunday (February 21), three men, aged 19, 20 and 33, a 34-year-old woman and a 17-year-old girl were arrested in West Yorkshire on suspicion of assisting an offender. They have been released on police bail pending further enquiries.
Middleton was arrested on Saturday (February 20) in Dover.
The venue was open for the final time before being demolished.
